Vada Pav

Vada Pav, the most famous Mumbai roadside snack. The vada is made of a spicy potato filling deep fried in a gram flour batter. And served inside pav/bun with hot and spicy garlic chutney.


Ingredients :

  • Burger Buns/ Pav Buns - 4
  • Potato boiled and peeled - 250gms
  • Jeera - 1 tsp
  • Hing a pinch
  • Ginger-Garlic Paste - 2 tsp
  • Besan - 1 cup
  • Corriander Leaves as required
  • Salt to taste
  • Oil -1 tbsp + for deep frying
  • Dry Garlic Chutney as required.
Method :
  • In a pan heat 1 tbsp oil. Add jeera and hing.
  • When it splutters add ginger-garlic paste. Fry till raw smell goes away. Let it cool.
  • In a bowl take smashed potatoes, salt, jeera mix and chopped coriander leaves. Mix well.
  • For the batter take besan in a bowl. Add required amount of salt and water to make a thick batter.
  • Divide the potato mixture into 4 equal portions and shape them into balls.
  • Heat sufficient oil in kadai.
  • Dip each potato balls in besan mix and drop it into oil. Deep fry till golden and crisp on outside.
  • Drain on absorbent paper.
  • Slit each buns. Fry them on a hot tawa with oil/butter.
  • Spread some dry garlic chutney on one side, place a vada and press lightly.
  • Serve immediately with tomato ketchup.
