Semiyan/Vermicelli Upma, a nice healthy & quick breakfast. This interesting recipe is a variation of the popular and common South Indian recipe upma, using wheat vermicelli instead of semolina. It tastes great with freshly ground coconut chutney.
Ingredients :
- Semiyan/Vermicelli - 2 cups
- Mustard Seeds - 1 tsp
- Chana Dal - 2 tsp
- Urad Dal - 1/2 tsp
- Onion - 2 Medium
- Green Chili - 4
- Curry Leaves - 1 sprig
- Turmeric Powder - 1/4 tsp
- Tomato - 1 medium
- Salt to taste
- Lemon juice - 1 tbsp
- Oil - 2 tbsp
- Water - 4 cups
- Grated Coconut - 1/4 cup
- Coriander for garnishing
Method :
- Roast vermicelli in a pan on medium flame until it turns golden brown with continuous stirring. Keep it aside to cool.
- In a pan heat oil. When hot enough add mustard seeds and let it splutter.
- Add chana dal, urad dal and fry till crispy.
- Add sliced onions, slit green chilies, curry leaves and saute till onions are translucent.
- Add turmeric powder, saute and add chopped tomatoes. Saute till tomatoes are soft.
- Now add water, salt, grated coconut, lemon juice and allow it boil.
- Check the seasoning and add fried vermicelli and mix well.
- Cover with a lid and let it cook until water is absorbed. Stir in between occasionally to prevent sticking to the bottom.
- Turn off the flame and garnish with chopped coriander leaves. Cover the lid and let it sit for 5-10 mins.
- Serve hot with freshly ground coconut chutney.
Note : U can skip either tomato or lemon juice. And double the quantity of any of them you are using.
