Batata Vada is a popular Indian vegetarian fast food in Maharashtra, India. It literally means potato fritters. It consists of a potato mashed patty coated with chick pea flour, then deep-fried and served hot with savory condiments called chutney.
Ingredients :
- Potato - 5 medium sized
- Mustard - 1/4 tsp
- Green Chili-Garlic Paste - 2 tsp
- Ginger Paste - 1/2 tsp
- Pudina/Mint Leaves chopped - 1/2 cup
- Corinader Leaves chopped - 1/2 cup
- Saunf seeds - 1 tsp
- Turmeric Powder - 1/2 tsp
- Lemon Juice as per taste
- Sugar - 1/2 tsp
- Salt to taste
- Oil - 1 tbsp + for deep frying
- For batter :
- Besan/Chick pea flour - 2 cups
- Turmeric - 1/2 tsp
- Soda - 2 pinch
- Salt to taste
- Water as required
Method :
- Peel and smash boiled potatoes.
- In a pan heat oil. Add Mustard.
- When it splutters add gree chili-garlic paste, ginger paste and fry till raw smell goes away.
- Add in chopped pudina and coriander leaves and fry till raw smell goes away.
- Add in saunf seeds, turmeric powder and for a min.
- Add smashed potatoes and mix well.
- Add lemon juice, salt, sugar and combine well.
- Let it aside to cool.
- Meanwhile prepare a slightly thick batter using the mentioned ingredients.
- Once potato mix is cooled mix well with spatula/hand and make equal medium sized balls.
- Heat oil in a deep frying pan on medium flame.
- When oil is hot enough, dip each potato balls in the batter and drop it in the oil.
- Fry them till golden brown and crisp from outside.
- Serve hot with pudina chutney or curd-coriander dip or tomato ketchup.
Note : This vada can be used be used to make vada pav.
