Kalmi Kabab is a delicious Indian recipe served as a Side Dish. Kalmi Kabab is essentially chicken drumsticks marinated in yogurt and spices and cooked in a tandoor.
Whereas here I ve precooked the drumsticks in a pan till 3/4th and then roasted it over stove flame. Alternatively it can also be cooked in oven or in microwave on grill mode.

1st Marination :

- Chicken Drumstick - 500 gms
- Onion - 1
- Saunf - 1/2 tsp
- Green cardamom - 2
- Cloves - 4
- Cinnamon - 1" stick
- Green chilli - 3 to 4
- Pudina chopped - 2 tbsp
- Kasuri Methi - 2 tbsp
- Garlic Chopped - 2 tbsp
- Besan - 3tbsp
- Oil - 8tbsp
1st Marination :
- Hung curd - 1 cup
- Turmeric powder - 1/2 tsp
- Salt as required
2nd Marination :
- Ginger Garlic Paste - 1 tbsp
- Jeera Powder - 1 tsp
- Chilli Powder - 1 tbsp
- Coriander Powder - 2tbsp
- Turmeric Powder - 1/2 tsp
- Garam Masala - 1 tsp
- Lemon Juice - 2tbsp
Method :
- Clean the drumstick. Pat dry and make insertions using a knife.
- Marinate chicken drumstick with the 1st marination ingredients for 15 mins in the refrigerator.
- In a pan heat 4tbsp oil. Add saunf, green cardamom, cloves, cinnamon. When it splutters add green chilli, onion. Fry till translucent.
- Add pudina, kasuri methi and garlic. Fry till onion is brown in color.
- Add besan and saute till raw smell goes away. Let it to cool.
- Take the marinated drumsticks in a bowl. Add all the 2nd marination ingredients. Mix well.
- Add the onion mixture. Add marinated curd mixture if required. Mix well and add salt as required. Let it marinate for minimum 2 hrs or overnight in the refrigerator.
- In a pan heat 4 tbsp oil. Drop in marinated chicken drumstick with the marinade and cook in medium flame for 10 mins with lid covered.
- Place a phulka grill on the stove burner and place each drumstick and fry on all the sides.
- Serve hot with lemon, onions rings and mint chutney.
