Yummy & Delicious Mixed Vegetable sabzi that goes well with any of Indian breads and mild flavoured rice. Fresh vegetables precooked and added to the creamy tomato onion rich gravy.

- Mixed Vegetables chopped - 250 gms
- Onion - 6
- Tomato - 2
- Capsicum - 1
- Ginger Garlic paste - 2 tbsp
- Turmeric Powder - 1/2 tsp
- Chilli Powder - 1 tbsp
- Coriander Powder - 1 tbsp
- Everest Shahi Paneer Masala - 1 tbsp
- Hing/Asafoetida a pinch
- Fresh Cream - 1 tbsp + for garnishing
- Cashewnut Powder - 1tbsp
- Salt to taste
- Coriander leaves for garnishing
- Oil as required
Method :
- For the gravy : Roughly chop 4 onions and tomato. Heat 3 tbsp oil in a pan. Add in onions and fry till translucent. Now add tomatoes and saute till tomatoes are soft. Let it cool and grind to a fine puree.
- Pre cook chopped vegetables of your choice with required amount of salt. U can either cook it in water or in microwave oven or even steam it.
- Chop other 2 onions into 4 equal parts and separate its layers. Chop Capsicum into cubes. Fry separately in 1 tbsp oil and keep aside.
- For the sabzi heat 4 tbsp oil. Add in ginger garlic paste and fry till raw smell goes away. Add hing and 1 tbsp cream. Fry for a min. Now add the prepared onion tomato puree. Saute for 2 to 3 mins.
- Add in the spice powders, cashewnut powder, salt and mix well. Keep stirring till the mixture comes to boil.
- When almost to boil add in cooked vegetables, sauteed onion and capsicum cubes.
- Cook till oil oozes out. Now add in 5 tbsp of hot oil.
- While serving garnish with a dash of fresh cream and chopped coriander leaves.
- It goes well with any Indian bread or any flavoured rice like Paneer Peas Pulao, Jeera Rice.
Note :
- Here I have used beans, carrot, cauliflower, potato and green peas. U can even add paneer cubes while adding cooked vegetables.
- I served it with paneer peas pulao.
- Adding Everest Shahi Paneer Masala makes it taste and smell like the one served in restaurant.
- U can even make Shahi Paneer Masala or Paneer Matar Sabzi with the same recipe.
