Ingredients :
- Egg - 4
- Onion - 1 medium-sized
- Curry Leaves - 1 sprig
- Masala Powder - 1 tsp
- Pepper Powder - 1/2 tsp
- Salt to taste
- Oil - 2 tbsp
- Coriander for garnishing
Method :
- Hard boil the eggs - Boil water and add eggs and cook for 10 mins on medium flame. Let it cool down or immerse in cold water. Once it cools down crack open it and remove the shell. Halve them vertically and set aside.
- Heat oil in a pan. Add curry leaves and let it splutter.
- Add long sliced onions and fry till they are light brown.
- Add masala powder (equal amount of chili and coriander powder), pepper powder, salt and fry for few seconds (Make sure masala doesn't get burnt.)
- Add half cup water and let it come to boil.
- Now add halved eggs with cut side down. Cook for 2 mins.
- Turn over the eggs and cook for a minute r till all the water is evaporated.
- Garnish with chopped coriander leaves and serve. It goes well with steamed rice.
